Aloo Methi (Fenugreek Potatoes)


Aloo Methi 
(Potatoes with Fenugreek Leaves)



Ingredients:

1 Kg Fenugreek leaves (Methi)
3 Potatoes
2 Onions (Chopped)
1/2 tsp Cumin Seeds
5-6 Tomatoes
2 Green Chilies
1 tsp Salt or as per your taste
1/2 tbsp Red Chilies
1/4 tsp turmeric powder
Oil

Method:

1.Wash Fenugreek leaves.Add 1/2 tsp salt,squeeze water from them and leave till they get dry.
2.Fry onions in a pan.Add cumin seeds,green chilies,salt,red chilies,turmeric powder and Fenugreek leaves.Cook for 7-8 minutes.
3.Add potatoes and one tomato.Cook for 5 minutes and then cover it on low flame.
4.One by one add tomatoes to it till potatoes get done and fully mixed with Fenugreek leaves.
5.Serve with Pickle.

Note: 
  • Do not use water while cooking because it gives bitter taste to Fenugreek leaves. 
  • Before cooking you can also mix turmeric powder with Fenugreek leaves instead of mixing with salt.

Potato Samosay


Potato Samosay



Ingredients:
Flour Covering Ingredients:

2 cups Refined Flour (Maida)
1/4 tsp Baking Powder (To raise the flour)
1/2 tsp Salt 
1 tbsp Butter
3 tsp Oil 

Potato Filling Ingredients:

3 Potatoes (Boiled and mashed)
1/2 Onion (Chopped)
1/2 tsp Coriander Seeds (Zeera)
2 tsp Soya Sauce
2 Green Chilies (Chopped)
2 tbsp Chopped Coriander (leaf)
Oil for frying

Flour Paste:

3 tbsp flour
1/2 Egg
(Combine them to make flour paste which seals the samosa sides)

Method:

1.Combine salt,oil,baking powder with refined flour and knead.Keep dough for 8-10 minutes.Make small balls of it.
2.Apply little oil and roll out into small rounds.Cover it and stay aside for 20-25 minutes.
3.Heat oil in a pan.Fry onions,cumin seeds,green chilies.Add mashed potatoes and all the spices.Cook for 5 minutes.
4.Flatten round balls and roll out the dough to make sides even and thin.Cut the sides to give it rectangle shape.Now cut 2-3 long sections of one rectangle.
5.Apply flour paste on the sides of it.Then fill with potato filling and again apply flour paste on the top to close covering to give them triangle shape.
6.Heat oil in a wok and fry samosay till it gets its golden color.
7.Remove on absorbent paper.Serve with Ketchup.

Chicken Rice


Chicken Rice


Ingredients:

1 Cup Rice
4-5 Chicken pieces
2 Onions
1 Tomato
2 Green Chilies
2 tsp Ginger paste
1 tsp Salt
1/2 tsp Black Pepper Powder
1/4 tsp white Pepper Powder
5-6 Whole Black Pepper
5 tbsp Oil

Method:

1.Make stock of chicken with water,salt,black pepper powder and whole black pepper.
2.Heat oil in a pan.Brown onions.Add ginger paste,green chilies, tomato and chicken.
3.Add salt,black pepper powder,soya sauce,white pepper powder and cook for 5-7 minutes.
4.Add chicken stock and when it comes to a boil,add rice.
5.Cook till rice get done.Serve with fresh salad.

Mutton Potatoes


Mutton Potatoes
(Aloo Gosht)




Ingredients:

1/2 Kg Mutton
3-4 medium sized Potatoes
2 Onions (Medium sized)
2 Tomatoes
2 Garlic cloves
2 tbsp Cutted Ginger
7-8 Whole Black Pepper
1 /2 tsp Cumin Seeds (Zeera) 
1/2 tbsp Salt
1 tsp Red Chilies
1 tsp Salt 
1/4 tsp Turmeric powder (Haldi)
1/2 tsp Mixed spices powder (Garam Masalah)
2-3 Chopped Green Chilies
2 tbsp Chopped Coriander
Few drops of Kewra water (Essence)
1/4 Cup Oil

Method:

1.Tenderize mutton in water,onions,garlic cloves,tomatoes,black whole pepper,salt,red chilies,cumin seeds and turmeric powder.
2.After tenderizing meat,add oil and green chilies. Cook for 10-15 minutes.
3.Add potatoes.Cook for 5-7 minutes then add water.Cook on low flame till potatoes get done.
4.Garnish with whole spices powder,sliced ginger and coriander. 

Potato Cutlets


Potato Cutlets



Ingredients:

4 Potatoes
1 Capsicum
Salt 1/2 tsp
2 Green Chilies(chopped)
1/2 tsp Red chili powder
1/2 tsp Black pepper powder
4 pinches White pepper powder
2 tbsp Coriander(chopped)
1 ful tbsp of Mayonnaise
1 tsp Soya sauce
1 Egg  
1/2 cup Bread crumbs
Oil for frying

Method:

1.Boil potatoes and mash it.
2.Cut capsicum in small cube shape.
3.Mix potatoes with capsicum and chopped coriander.
4.Add salt,pepper, mayonnaise,soya sauce and mix well.
5.Give round shape to cutlets.Firstly dip in egg then coat with bread crumbs and fry.
6.Serve with ketchup.

Spinach Potatoes


Spinach Potatoes
(Aloo Palak)



Ingredients:

1 kg Spinach
4 Potatoes
3 Green Chilies
2 Green Cardamon (Choti Illaichi)
1 tsp Red Chilies
1 tsp Ginger garlic paste
3 Tomatoes
1/2 cup Oil

Method:

1.Boil spinach for ten minutes then drain it.
2.Take a pan.Heat oil and light brown onions.Add green cardamom,ginger garlic paste,tomatoes and all the spices.Fry till mixture fully get done.
3.Now add boiled spinach and fry for 10 minutes.
4.Add cutted potatoes in it and 1/2 cup of water.
5.Cook it till potatoes get done and mixed fully with spinach.

Macaroni with Chicken


Macaroni with Chicken



Ingredients:

1/2 kg Chicken
1 packet Macaroni
3 Capsicum
1 Carrot
1/4 of whole Cabbage
1 tsp Black Pepper
2 tbsp Soya Sauce
1 tsp Vinegar
1/2 tsp White pepper
1/4 cup Cheese
3 Tomatoes(Small size)
1/2 tsp Salt
1/2 tsp Ajino moto
3 tbsp Oil

Method:

1.Boil chicken with salt,black pepper and 1 tsp soya sauce.
2.Stain chicken from stock and boil macaroni in same stock with 1 tsp oil.
3.Heat oil in a pan.Stir fry vegetables in it with salt and pepper.
4.Dish out vegetables in a plate.Fry tomatoes in same oil.
5.Add chicken,salt,black and white pepper,soya sauce,ajino moto and vinegar.
6.Add stir fried vegetables and chicken and cook for 3- 5 minutes till macaroni fully get mixed with chicken and vegetable mixture.
7.Spread cheese on the top of macaroni. Give it heat till it melts and serve.
